Garlicky Alfredo Sauce
- 15g Light Butter

- 1/2 tsp Salt (to taste)
- 1/2 tsp Chilli Flakes (optional)
- 1 tbsp Dijon Mustard
- 20g Minced Garlic
- 1 tbsp Fresh parsley
- 200g Blended cottage cheese
- 250g 1% Milk (blend with cottage cheese)
Step-by-Step — How to Make It
Cube the beef into 1″ pieces, cut potatoes into even chunks, mince garlic and chop parsley. Measure all ingredients before you start.
Boil potatoes 12–14 minutes until fork tender. Drain, steam 5 minutes, then mash with butter, cream cheese and milk. Season to taste.
Season beef with salt, pepper, garlic powder and parsley. Heat olive oil + 30g butter over medium-high. Sear cubes 2–3 minutes per side until crust forms. Add minced garlic at the end. Rest briefly.
Melt 15g butter, add smoked paprika & garlic, then Dijon and parsley. Blend cottage cheese + milk until silky, add to pan and simmer gently on low — do not boil. Stir until smooth.
Plate mashed potatoes, top with steak bites, drizzle Alfredo sauce, garnish with parsley and cracked pepper. Serve hot and enjoy.
Chef Tips
For the silkiest sauce, fully blend cottage cheese and milk before heating. Use an electric masher for fluffier potatoes. Rest steak 3–4 minutes to retain juices.
