  • 1/2 onion, sliced
  • 1 package of enoki mushrooms (divided into 12 bundles)
  • 3 eggs, beaten
  • Coriander (or green onions), to garnish
  • Sesame seeds, to garnish

Method — Step by Step

  1. 1.Make the Sauce: In a bowl, mix 3/4 cup dashi stock, 4 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sugar and a pinch of black pepper. Set aside.
  2. 2.Prepare Enoki: Remove the woody base and divide the enoki into 12 even portions. Rinse thoroughly under running water and dry completely.
  3. 3.Assemble Rolls: Take one thawed beef slice, place one enoki bundle on top, roll tightly and set aside. Repeat until all are wrapped.
  4. 4.Sauté Onion: Heat a drizzle of oil in a pan over medium heat. Stir-fry onion slices until slightly golden.
  5. 5.Braise Beef: Neatly arrange beef rolls on top of the onion. Pour in the prepared sauce, cover and let simmer for 3–4 minutes until beef is half-cooked.
  6. 6.Add Eggs: Uncover, pour beaten eggs over the rolls, cover again and cook 2 minutes until eggs set.
  7. 7.Finish & Serve: Top with coriander or green onions and sesame seeds. Serve hot over steamed rice.
